Hi guys! Happy Sunday! Today I am so excited to share with you this delicious and rich recipe, I love pasta so I had to create a new vegan and healthy vegan bolognese spaghetti recipe.

This is the best vegan spaghetti bolognese!

I just use shiitake mushrooms instead of meat and vegan cheese or nutritional yeast instead of the dairy cheese.

The taste is so delicious! The key to making the best bolognese sauce is to cook the ingredients slowly, by doing so you will get a rich and intense flavor sauce.

for the bolognese mushroom sauce:

a tsp olive oil

a chopped onion

a tsp paprika

a chopped carrot

a chopped celery stick

4 chopped garlic cloves

a tsp dry rosemary

a tsp dry oregano

3 cups chopped shiitake mushrooms

a cup spinach

a cup chopped cherry tomatoes

a cup tomato sauce

1/2 cup red wine

a handful of chopped basil leaves

salt and pepper

vegan grated cheese or nutritional yeast

for the pasta:

500g spaghetti pasta

a tbsp olive oil

salt and pepper

preparation time: 20 minutes

total time: 1 hour

serving size: 4 serves


We are going to start by making the best vegan bolognese, to get the best flavor we will cook the ingredients at medium heat.

In a medium-size pan, add the olive oil, onion, and paprika and cook it at medium heat until the onion is soft, approximately 5 minutes.

Then add the carrot, celery, garlic, rosemary, oregano and cook until all the ingredients are soft, for around 5 minutes.

You can add the shiitake mushrooms, spinach, and cherry tomatoes, cook them for approximately 10 minutes.

Once all the veggies are soft and nice, add the tomato sauce, basil leaves and wine, the liquid should cover the veggies. Put the lid on and leave it to reduce the liquid for around 20 minutes at low heat, you want to get a super-rich and creamy sauce.

Once done taste and add salt and pepper to the taste.

To make the spaghetti pasta, follow the packaging instructions, once ready I like to sprinkle some olive oil, salt, and pepper, so it has a flavor already.

To serve, add pasta, bolognese sauce and top it with vegan grated cheese or nutritional yeast and add some fresh basil.
