I made vegan soy chorizo recipe, very easy to prepare with simple ingredients such as paprika, onion and other spices that will give it that characteristic chorizo flavour. Spanish chorizo is a fermented, cured, smoked sausage, which may be sliced and eaten without cooking, or added as an ingredient to add flavour to other dishes.
Elsewhere, some sausages sold as chorizo may not be fermented and cured, and require cooking before eating.
Spanish chorizo and Portuguese chouriço get their distinctive smokiness and deep red colour from dried, smoked, red peppers (pimentón/pimentão).
You can eat chorizo in a sandwich, grilled, fried, or simmered in liquid.

Red onion, 120 g
8 garlic cloves
Olive oil, 25 g
Sweet paprika, 4 teaspoons
Hot paprika, 3 teaspoons
Water, 60 ml
Pepper powder, 1 tsp
Salt, 1 teaspoon
Oregano, 1 tsp
Powdered cumin, 1 tsp
Chorizo pepper pulp, 2 teaspoons
Small size textured soybeans, 30 g
Oatmeal, 100 g
Preparation time: 1 hour
Total time: 1 hour 15 minutes
Serving: 4 servings
Firstly chop the onion and garlic.
Secondly in a skillet over medium heat, add the onion, minced garlic, olive oil, paprika, water, pepper, salt, oregano, cumin, and chorizo pepper pulp, cook over low heat for 10 minutes stirring occasionally so that it does not burn.
Following add the soy and flour, mix with the rest using a fork or wooden spoon.
Divide the dough into 5 parts, shape each part into a sausage. Wrap each vegan chorizo in parchment paper.
Finally steam the chorizos for 1 hour.
