VEGAN PESTO PIZZA WITH CHERRY TOMATOES, ARTICHOKES, ALMONDS, RED ONION, ROCKET, AVOCADO AND POPPY SEEDS

VEGAN PESTO PIZZA WITH CHERRY TOMATOES, ARTICHOKES, ALMONDS, RED ONION, ROCKET, AVOCADO AND POPPY SEEDS

I love pesto pizzas, I just add pesto to all my pizzas, there is something so savory about it. This time I wanted to add also some artichokes, as they are a bit tricky to cook I like to buy the cooked ones from the market, I just make sure that I buy the organic ones without nasty ingredients, this saves me so much time!

The dough itself is really crunchy and delicious, I wasn’t sure about adding almonds as toppings, I made the right choice, really delicious too! I really love this combination of veggies.

I always enjoy adding some fresh rocket to my pizzas, with the avocado works amazing!

What is you favorite pizza?


INGREDIENTS:


for the pesto:

a garlic clove

a pinch of Himalayan salt or sea salt

2 handfuls of basil

1/2 cup of cashews

1/4 cup of cold press extra virgin olive oil

for the base of the pizza:

2 tbsp active dry yeast

2 tbsp Himalayan salt

3 & 1/2 cups of rye flour and a bit more to knead

2 tbsp cold press extra virgin olive oil

1 cup of water, slightly warm

extra toppings:

5 sliced cherry tomatoes

2 tbsp chopped almonds

5 boiled artichokes in halves

1/4 red onion, sliced

a tbsp dried oregano

a tbsp olive oil

a handful of fresh rocket leaves

1/2 sliced avocado

a tbsp poppy seeds


preparation time: 20 minutes

total time: 1 hour 30 minutes

serving size: 2 serves


METHOD:


I am going to start by making the dough. Mix all the ingredients listed for the dough, once you get the dough, cover with a plastic film or a fabric, set aside for 1 hour.

The dough will approximately double the size, I use half of the dough and reserve the other dough for another time.

Whilst the dough is in the making let’s prepare the pesto, mix all the ingredients in a food processor until you get a creamy texture.

Once the dough is ready in a clean surface, add some flour and gently knead the dough.

I prefer to cook a bit the pizza base and then add the rest of the ingredients. To make this pizza I baked the base of the pizza for approximately 7 minutes at 200ºC.

Then add some pesto, cherry tomatoes, artichokes, almonds, red onion, oregano and a tbsp of olive oil. Cook until golden at 200ºC for about 15 minutes.

Top it all with some fresh rocket leaves, avocado and poppy seeds. The most delicious veggies pesto pizza with avocado and artichokes!
