Hi guys! With holiday season around the corner I though it would be fun a useful to make this delicious vegan green bean casserole, it is also dairy free.

This yummy dairy free green bean casserole could be served as a main dish or as a side, it is really delicious and a fun way to incorporate fine green beans into your diet. The taste of the fried onions is absolutely delicious, and the creaminess of the sauce is just like a dream.

You can really taste the flavor of the fine green beans, but I would say the main flavors are coming from the garlic, shallots and crispy fried onions.

This vegan green bean casserole, also known by dairy free green bean casserole is really easy to prepare, you don´t have to be a professional chef, it is pretty quick and of course healthy and really delicious.

VEGAN GREEN BEAN CASSEROLE | DAIRY FREE GREEN BEAN CASSEROLE WITH CRISPY FRIED ONION


INGREDIENTS:


3 tbsp olive oil

3 garlic cloves, finely cut

3 shallots, finely cut

500 g green fine beans

4 cups chopped mushrooms

2 tbsp rye flour

3/4 cup water

1 cup unsweetened almond milk

2 cups crispy fried onions

Himalayan salt and pepper


preparation time: 20 minutes

total time: 30 minutes

serving size: 4 serves


METHOD:


Start by bringing a large casserole of water to a boil, add 1/2 tsp of salt. Once the water is boiling add the fine green beans, cook it for 10 minutes or until the fine green beans are soft.

Once cook, drain and keep in a side, will use them later 🙂

Preheat the ove to 200C.

In a large pan at medium heat, add olive oil, garlic and shallots, cook for 3 minutes until golden. Then add the mushrooms and cook for 7 to 10 minutes until the mushrooms are reduced in size, add some salt and pepper.

Sprinkle the flour and make sure that all the veggies are covered with the flour, cook for about 3 minutes and then add the water and the almond milk, whisk it, just to have an even liquid texture.

Cook for 10 minutes, until the liquid is almost reduced. Taste and adjust with more salt and pepper if needed.

Once cooked, add the fine green beans, mix it well in the sauce pan and then transfer it to an oven or you could use the pan if it is oven safe.

Cover the top with crispy fried onions and bake for around 10 to 15 minutes, you just want to warm up the mix.
