Vegan Fritters Recipe

This Vegan fritters are a dream in a plate, so full filling, love them.

This recipe is really easy, you just need to make sure that the dough is well made, the rest is super easy, I include also the recipe for the salad and some extras but it is really up to you if you want to add another side.

I love that this Vegan fritters are made with veggies like sweet potatoes, carrots and also lentils, super healthy and they have a lot of flavour coming from the garlic and paprika.

I made an oven version because in general I just prefer food that is made in the oven, it is healthier and you don´t have to use as much oil as in the pan.

I hope you like them!

Vegan Fritters Recipe

1 cup cooked lentils

1 small red onion, chopped

1 clove of garlic

2 medium sized sweet potatoes

1 medium sized carrot

5 tbsp all purpose flour

1 tsp smoked paprika powder

2 tbsp olive oil

salt, to taste

black pepper, to taste

1/2 cup plane vegan yogurt

1 tbsp olive oil

1 tsp dried thyme

1 cup green olives

2 cups cherry tomatoes, in halves

1 cup zucchini in cubes

2 tbsp olive oil

1 tsp dried thyme

slices of avocado

fresh oregano

preparation time: 40 minutes

total time: 40 minutes

serving size: 4 serves

Preheat the oven to 200ºC.

Peel the sweet potatoes and cut them into cubes, place them into a baking tray and add some olive oil, cook in the oven for around 15 minutes until soft.

In a food processor grate the red onion, carrot and garlic. Transfer the grated veggies into a large bowl and add the lentils and sweet potatoes.

Now it is time to mix it, honestly the best way is by using your hands, you need to mix it until everything becomes kind of a dough, once you have it is time to add flour, paprika, salt and pepper.

To make the fritters, use a 3 tablespoons of the dough and make a round shape, then place them into a baking tray covered with baking paper.

You can make around 12 fritters.

For the sauce simply mix the ingredients and also for the salad, do exactly the same, mix the listed ingredients.

To serve, add fritters, 2 tablespoon on salad, some avocado, lemon and top it all with yogurt and fresh oregano.
