This delicious vegan chocolate banana bread smells like Nutella and tastes like the Kinder Delice, so delicious! my entire flat smells amazing after cooking the bread.
It makes a perfect breakfast or dessert, even as snack too, it has a lovely taste to chocolate, really creamy and so delicious.
I was a bit scared at first to make this bread as it was the first time that I was making it, but honestly, so easy, I really simplify the process by indicating the wet and dry ingredients.
I hope you like it!
3 ripe bananas
1/3 cup coconut oil
a tsp of vanilla extract
a tsp apple cider vinegar
1/2 cup water
1 & 1/4 cup rye flour
1/2 cup unsweetened cacao powder
1 cup coconut sugar
a tsp baking powder
a tsp baking soda
a tsp Himalayan sea salt
1/4 cup hazelnuts
preparation time: 10 minutes
total time: 1 hour
serving size: 6
Preheat the oven to 170ºC.
Add the wet ingredients to a food processor and blend.
In a large bowl mix all the dry ingredients, then pour the wet mix until the texture is creamy and even.
I use a rectangular mold for this recipe, cover the inside part of the mold with some baking paper, so it will be easy to remove the chocolate banana bread once is cook.
Pour the batter on the mold, then top it with a banana cut in half and add some hazelnuts.
Cook at 170ºC for around 40 minutes or until a toothpick inserted in the middle comes out clean.
Once ready, allow to cool for 5 minutes or so and enjoy!
