STRAWBERRY PEACH PIE

I can see pies all around internet at the moment, last week I decided to make a strawberry peach pie, I couldn’t imagine how delicious it would be.

The filling tastes as delicious as homemade jam, is sweet, the fruit is soft and sweet because of the maple syrup and I love the touch of cinnamon.

The pie is crunchy and the flowers are a bit crunchy but not as the edges, I really enjoy this strawberry peach pie, you could choose another fruits and still would be delicious.

If you prefer you could make a salty pie just by using vegetables instead of fruit, I hope you like it!


INGREDIENTS:


for the filling:

2 cups of strawberries

6 peaches

1/4 cup maple syrup

4 tsp cinnamon

1 & 1/2 glass of water

for the pastry:

500g rye flour

10 tsp olive oil

a tsp Himalayan salt

some water, around 1 glass


preparation time: 2 minutes

total time: 2 hour

serving size: 8 serves


METHOD:


To prepare this strawberry peach pie we´ll start by cutting our strawberries and peaches, in a large pot add the fruit, the maple syrup and the cinnamon.

Cook it at medium heat, don’t forget to add the water and give it a good stir, cook it for around 20 minutes. Leave the fruit to cool down for about 10 minutes.

Whilst the fruit is cooking we´ll be preparing the pastry for this strawberry peach pie, in a large bowl mix the flour, salt and olive oil, then add water just a bit and knead the dough, the dough must be a bit sticky so I like to go pouring the water into the mix little by little.

Once the dough is ready, put it in a plastic film and keep it in the fridge for an hour.

After the hour, divide your dough in two parts and stretch each of them, you want to make a top and bottom of your strawberry peach pie.

To stretch each side but the dough between two baking papers, it would be easier as the dough is sticky.

Once you have your base ready, put it in a mold and remove the excess around the sides, then add the fruits, don´t add the liquid of the fruits.

Preheat the oven to 200ºC.

Then you can make the shapes for the top of the pie, use the shape that you prefer and then top the pie.

Place the pie at the lowest part of your oven and cook it at 170ºC until golden, in this way the bottom will have more hot as the dough is thicker.
