Linzer Cookies Recipe The White Chestnut

Happy Monday!

As Christmas time is coming, what better way to celebrate and enjoy festive time than making Christmas cookies!

I decided to veganize the recipe of Linzer Cookies, they look so cute and delicious, I think these cookies could be a really great Christmas present.

These Christmas cookies are sweet and crunchy! The raspberry chia jam is so easy to make and so delicious, also healthy!



2 cups almond flour

1/2 cup cane sugar

1/2 cup vegan butter

a tbsp of orange zest

1/4 cup almond milk

1/2 vanilla bean

some glazing sugar

raspberry jam:

2 cups raspberries

1/3 cup cane sugar

1 cup water

3 tbsp chia seeds

preparation time: 20 minutes

total time: 50 minutes

serving size: 6 serves


In a large bowl mix 2 cups of almond flour, 1/2 cup of cane sugar, 1/2 cup of vegan butter, a tablespoon of orange zest, 1/4 cup of almond milk and 1/2 vanilla bean.

Once you have the dough, cover it with a cloth and chill it in the fridge for 30 minutes.

To make the raspberry chia jam, pour in a medium-size casserole 2 cups of raspberries, 1/3 cup cane sugar, 1 cup of water and 3 tablespoons of chia seeds, cook at medium heat for 10 minutes. Once done, leave it to cool also in the fridge whilst we finish the cookies.

Stretch the dough and start making the shapes, you will need a mold or a similar shape to, later on, cut into the shape of the cookie, once you have the shape of the cookies, place them into a tray covered with baking paper.

Bake in the oven at 200ºC for 10 minutes until golden.

Add glazing sugar to the cookies, and also add a teaspoon of the jam to each cookie. You will make 12 cookies.
