KALE AND POTATO SOUP WITH COCONUT YOGURT AND CHILI FLAKES
Hi guys! Today I am sharing this creamy and heartwarming kale and potato soup! Soups are the perfect way to warm you up in the wintertime.
At this point in the year, soups are just my favorite foods.
This kale and potato soup is made with simple ingredients and quite easy to find on the market, it is easy to prepare and really delicious.
I love to use kale in my recipes as kale is packed with nutrients, it is one of the world’s healthiest foods.
Kale, contains fiber, antioxidants, calcium, and potassium, among others. It is also a good source of vitamin C and iron.
This kale and potato soup is creamy, it has an intense flavor to kale and also a bit spicy because of the chili flakes, so delicious!

ingredients for the soup:
a tbsp of olive oil
a tsp of salt
a cup of almond milk
ingredients for the toppings:
1/2 cup coconut yogurt
4 tbsp olive oil
1 tbsp chili flakes
1/3 cup shelled hemp seeds
Preparation time: 10 minutes
Total time: 45 minutes
Serving size: 4 serves
Start by washing the kale leaves, then peel the potatoes and cut them into small pieces.
In a medium-large pot, add the kale, the potato, a tablespoon of olive oil and a teaspoon of salt.
Cook it until soft, it will take around 30 minutes.
Once the potato and the kale are soft, drain them.
Blend the kale and the potato using a blender, it should be creamy, add around a cup of almond milk to get a creamy texture.
Taste the soup and add salt and pepper if needed.
To serve, top it with some coconut yogurt, a bit of olive oil, some chili flakes and shelled hemp seeds.
You can keep the leftovers in the fridge for 3 days.
