HEALTHY VEGAN NACHOS

Hi healthy fellows! Today I want to show you my favourite vegan nachos recipe, is healthy, easy to make, fresh and crispy, is like a bomb of flavours! As conventional nachos are usually a really unhealthy recipe I’ve working into create an easy and healthy vegan nachos recipe as I love vegan Mexican nachos!

This recipe is SO delicious, simple and super quick to make. There is something really special about the mix of the tortilla chips with the delicious fresh vegan guacamole sauce. It’s like a flavour bomb – the texture is crunchy, spicy, hearty, and fresh, you are going to love these vegan nachos!

INGREDIENTS:


5 cups of organic tortilla chips

1/2 cup of cooked black beans

2 cups of guacamole

1/2 cup of variety olives

1 small chopped jalapeño

1 large chopped red pepper

1 cup of cherry tomatoes halved

some leafs of coriander

1/2 chopped of red onion

1/2 teaspoon freshly ground black pepper

the juice of 1/2 lime


Total Time: 15 minutes

Serving Size: 3 serves

METHOD:


1 First thing, a delicious vegan nachos recipe must have a really good base so organic tortilla chips, you can buy them or make them in the oven. If you buy them as I did check the ingredients list to make sure that they don’t have any nasty ingredients, in my recipe I am using the RWGarcia ones.

2 One of the important keys that will make the difference is to take a bit of time layering the chips in just one slightly overlapping layer, so you’ve got a good strong base for your vegan nachos recipe.

3 In a large bowl mix all the ingredients (except for the tortilla chips), once the ingredients are mixed simply pour them on top of the layering tortilla chips that you just made. Enjoy!
