FOCACCIA BREAD with Cherry Tomatos + Paprika and a variety of Olives

This is the best focaccia bread I ever tried, so delicious, full of flavor, it has different types of olives, baked cherry tomatoes, the flavor of the paprika is just delicious.

Crunchy focaccia in the outside and super spongy in the inside, so delicious guys. I can see myself making more focaccia breads during autumn and winter to have them with soups, hummus, guacamole, it is much better than plane bread.

Focaccia Bread


4 cups strong white flour and a bit extra to knead

1 tsp Himalayan salt

1 & 1/2 cups room temperature water

1 tbsp bread yeast

9 tsp olive oil

2 tsp maple syrup

10 cherry tomatos

10 black olives

10 green olives

some fresh rosemary

some fresh oregano

1 tsp paprika

preparation time: 30 minutes

total time: 3 minutes

serving size: 6 serves


To make this stunning focaccia bread, we´ll start by mixing the water with the bread yeast, leave it 10 min to activate.

Whilst the yeast is activating, in a large bowl add the flour and the salt, mix it well.

Back the the water with the bread yeast, it is time now to add 5 tsp of olive oil and 2 tsp maple syrup, give it a good stir and the pour it into the bowl.

Carry on mixing in it with your hands, once all the dough is sticky, sprinkle some flour in a clean surface, take the dough out of the bowl and start kneading the dough.

Knead the dough for about 8 minutes, make sure that you don´t add more flour than needed, we want to have a soft dough.

In a clean bowl pour 1 tsp of olive oil and make sure that the olive oil is covering all the inside surface of the bowl, then put the dough in the bowl and cover it with some plastic film, leave to rest at least 1 hour and half or until doble the size.
I like to leave it overnight so it has room to increase the size, leave it in a warm place in the kitchen, this helps to increase the size quicker.

Once the dough is ready, knead it 2 minutes mores, make sure that you sprinkle some more flour into the surface as the dough will be sticky.

For this recipe I use a baking tray and cover it with some baking paper, I shaped my dough as a bread shape, as an oval shaped.

Once you have your desired shaped cover the dough again with a towel and leave it to rest for 30 minutes to 1 hour.

15 minutes before you finish preparing the focaccia bread preheat your oven to 200ºC.

Now it is time to make the fun stuff! 🙂 Use your fingers to press the dough, so you make kind of holes all around the dough, then add some cherry tomatoes, olives, fresh rosemary, oregano, then sprinkle some paprika all over and finish by adding 3 tsp of olive oil.

Bake your focaccia bread at 170ºC for around 35 minutes, should be golden and crunchy in the outside and soft in the inside 🙂

Hola The White Chestnut,

Dónde se puede comprar la bread yeast en España? ¿Es levadura fresca? ¿O levadura seca? ¿O de panadero? Con tanto oferta, es un lío.
