These crunchy quinoa chocolate bites are one of the best things ever. They’re so simple to make and they’re packed with goodness, which will help start your day in a positive way.

The chocolate and the nuts gives it a rich flavour and the dates brings the sweetness to the mix, the ginger is the perfect touch for freshness, they are made with lots of nuts so they will really fill you up.

I love to have them as a morning/ afternoon snack.


10 Medjool dates, pitted

2 tbsp cold-pressed coconut oil

1 cup cashews butter (you can use any nut butter)

1/2 cup cashew nuts, chopped

1/2 cup of macadamia nuts, chopped

1 cup puffed quinoa

1 tbsp of poppy seeds

a pinch sea salt flakes

1 tbsp raw ginger, grated

100 g dark chocolate 85% cocoa

1/3 cup desiccated coconut

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Serving Size: 12 bites


1 In a medium pan add the smashed dates, coconut oil, cashew butter, chopped cashew nuts, chopped macadamia nuts, quinoa, poppy seeds and grated ginger warm it at low heat for 7 minutes or so.

2 Cover a tray with some baking paper and pour the mix evenly.

3 In another pan, melt the dark chocolate with the sea salt and then cover the mix with this melted chocolate, then add some coconut and keep it in the fridge for 1 hour or so to let it cool.
