Vegan Chia puddings are just about everywhere right now, I’m sure if you pop into your local vegan restaurant or take a scroll through Instagram you will understand the phenomenon of this pudding. I decided to share my favourite chia pudding at the moment. I started creating different combinations with seasonal fruit and haven’t been able to stop. I found that this coconut – passion chia pudding is the best one, is fresh, delicious and packed with goodness, I believe this is one of the best options to start your day, and is super quick to make, you just need to leave the chia seeds overnight and you can have this chia pudding for a few days just adding your favourite fruit each day.


1 cup of coconut milk

2 tablespoons of chia seeds

1 tablespoon of Agave syrup

1/3 cup raspberries

1/3 cup blackcurrants

1/3 cup red currants

¼ cup coconut oil

Total Time: 1 hour, 30 minutes

Serving Size: 1 serve


1 In a cup just pour the coconut milk, then add the chia seeds, the Agave syrup and half of the passion fruit, stir for 3 minutes or so, as this helps to the chia seeds to start absorbing the coconut milk. I like to leave the mix overnight so you’ll get the perfect chia pudding. Otherwise you will need to leave it for at least a couple of hours to get a consistent chia pudding.

2Once your mix of coconut milk and chia seeds is ready pour your chia pudding into a bowl and start preparing your bowl, add the other half of your passion fruit on top of the chia pudding, the blackcurrants, the redcurrants and some fresh chopped mint. So delicious smells amazing!
