After our travel from Copenhagen we are back in Spain loving so much coconut chia seed pudding! We just found it in some many places combined with tons of different toppings! I just want to have chia pudding all time.
I made this recipe last Sunday, I was hungry and I didn’t have any snack so, it just came to my mind the chia pudding 🙂
I added some of my favorites toppings but you could just customize your coconut chia pudding and add the toppings that you enjoy the most. I have to say that this pudding is amazing!
By adding so many layers you get so many different flavors… I highly recommend to add the salty almonds, as the rest of ingredients are sweet, the salty almonds add a really nice touch.

for the chia seed pudding:
2/3 cups coconut milk
2 tbsp chia seeds
2 tbsp homemade blueberry jam
2 tbsp nut butter
3 tbsp blueberry vegan yogurt
5 salted almonds
1 tbsp coconut chips
2 sliced strawberries
a mint leaf
total time: 10 minutes
serving size: 1 serve
To prepare this glorious coconut chia seed pudding jar, we´ll start by preparing the coconut chia seed pudding base.
In a glass add the milk and chia seeds, give it a stir and leave it overnight to sit or at least a couple of hours.
Once your chia seed pudding is ready to use, for this recipe I made quite a few delicious layers.
I started by adding some nut butter, then blueberry jam, then pour the coconut chia seed pudding, then blueberry yogurt, some coconut chips, blueberries, strawberries and then top it all with a fresh mint leaf! Yum Yum Yum 🙂
